Today's Recipe - Southwestern Cod Sauté

Today's Recipe
 
If you don't know what to serve for dinner tonight ...
 

This is a great meal-in-one dish, which includes protein from the fish and vitamins and minerals from the variety of vegetables. And it can be prepared in just 25 minutes using our Healthy Sauté method of cooking, which uses no heated oils. Enjoy!

Prep and Cook Time: 15 minutes, Cooking Time: 10 minutes
Ingredients:
  • 1 medium onion, cut in half and sliced medium thick
  • 6 medium cloves garlic, pressed
  • 1-2 tsp minced jalapeno pepper*, seeds removed
  • 1 TBS chicken broth
  • 2 cups diced zucchini into 1/2-inch cubes)
  • 1 lb cod filets, cut into 1 inch pieces
  • 15 oz can diced tomatoes
  • 3 TBS fresh lemon juice
  • 2 TBS chopped fresh cilantro
  • 1 TBS chopped fresh oregano
  • 1 ripe but firm medium avocado, diced into 1-inch pieces
  • salt and black pepper to taste
  • *if you like your food less spicy, consider using less jalapeno pepper
Directions:
  1. Cut onion and press garlic and let sit for at least 5 minutes to bring out their health-promoting properties:.
  2. Prepare all other ingredients before starting the sauté.
  3. Heat 1 TBS broth in a 10-12 inch stainless steel skillet. Healthy Sauté onion in broth over medium heat, stirring frequently for 5 minutes.
  4. Add garlic, zucchini, jalapeno, and cod and continue to sauté for another 2 minutes, stirring frequently.
  5. Add rest of ingredients, except avocado, and cook for another 2 minutes. Add avocado, season with salt, pepper and serve.
Serves 4 Serving Suggestion: Serve with
  • Rice

Today's Healthy Recipe - Mediterranean Cod with Tomatoes

If you don't know what to serve for dinner tonight ...

Enjoy this low-fat meal with cod as part of your Healthiest Way of Eating this week. It not only tastes delicious but one serving provides 80% of the Daily Value (DV) for health-promoting selenium and 66% DV for vitamin B-12 and much more.

Mediterranean Cod with Tomatoes















Prep and Cook Time: 20 minutes
Ingredients:
  • 1 lb cod fillets
  • 2 medium onions, sliced medium thick
  • 3 medium cloves garlic, chopped
  • 1/2 cup + 1 TBS chicken or vegetable broth
  • 2 cups fresh or 1 15 oz can (BPA-free) diced tomatoes
  • 2 TBS fresh lemon juice
  • *1/4 cup chopped black olives
  • *1 TBS capers
  • 1/2 cup chopped fresh basil
  • 2 tsp chopped fresh rosemary
  • 2 tsp chopped fresh thyme
  • 1 lb cod fillets, cut into 2-inch pieces
  • salt and cracked black pepper to taste
  • red chili flakes to taste
  • * optional
Directions:
  1. Slice onions and chop garlic and let sit for 5 minutes to bring out their hidden health benefits.
  2. Heat 1 TBS broth in a 10-12 inch stainless steel pan or skillet. Healthy Sauté onion over medium heat for about 5 minutes in broth, until translucent. Add garlic and continue to sauté for another minute.
  3. Add rest of broth, diced tomatoes, and lemon juice. Bring to a simmer on high heat. Once it starts to simmer reduce heat to medium and simmer for about 5 minutes.
  4. Add herbs, olives, capers, and cod fillets; cover and simmer for about 5 minutes, depending on how thick the fish is. Season with salt and pepper to taste. Serve cod mixed with tomato herb sauce.

  • Great Antipasto Salad
  • Brown Rice

Are you addicted to the 'Plug In Drug'? An article by Dr Robert Anthony

Statistics tell us that 85% of North American households last year
did not buy one non-fiction book. Not one!  If that amazes you, here
is something even more amazing.  90% of those who bought a
non-fiction book did not read it!  Yet during that period of time
these same people spent 85 BILLION DOLLARS on movies and watched
television over 6 hours a day or 42 hours a week!

Now I can hear you say, "But Dr. A, that's not true in my
household". Perhaps. But look around and add up how many hours the
TV is running in the background, or you are flipping the remote
"just to see what's on".  Compare that to how much reading you do.  

Are you addicted to the "plug in drug"?  Both men and women are
highly addicted to this powerful drug. Men will often criticize
women for watching TV soap operas or other mindless TV programs,
but they are not immune to this drug either. Watching TV sports is
the most mindless, time wasting non-activity ever conceived by man.
Watching a group of men high on testosterone running around and
throwing a ball and screaming at the TV for hours on end is absurd.
There is nothing wrong with wanting to watch a special game or
playoff, but to spend your nights and weekends watching these games
is nothing short of being brain dead. 

The problem is we have become a nation of "watchers" instead of a
nation of "doers".  We watch people entertain, play sports and do
other activities but we rarely participate in these activities
ourselves. It wouldn't be so bad if you wanted to actually PLAY
sports and get some exercise, but to watch others do it for hours
on end is wasting thousands of hours of your life that could be
used to bring you everything you truly desire.

Here is my point.  If you don't have the riches you desire in your
life, it is a clear indicator of how you are spending your time.  I
know. You need to relax, your friends are doing it, you need to
know the "score", you need to know who is winning American Idol. 
Get serious! 

Now please don't write to me and argue the point. If you want to do
it, then be my guest, but you are "watching" your life away. If you
want more money, consider converting the time you watch TV -
probably 40 hours or more a week - into a part time business and
your income will jump through the roof. And the best part is you
will break your addiction to the "plug in drug".  It's a
win-win-win.

that you are making progress - IF YOU LOOK FOR IT!  No matter how

Clearing energy is not difficult; in fact it is easy.

The greatest challenge of living clear and free of lesser energies is recognizing when you need to clear yourself; noticing when you are not clear. You can notice that you are not clear anytime you feel emotionally upset, depressed, angry, or confused; when your thoughts are going in circles; when you feel stressed; when you notice knots of tension in your stomach; and so on.

These states, feelings, and thoughts are not who you really are! These are all indications that the impersonal energies of mass consciousness are affecting you. You are identifying with these energies as who you are, rather than remembering your true identity as a Divine being. Rejoice whenever you become aware that you are not clear, for in the past you may have lived in unclear states for days, thinking that feeling this way was normal.  Friendship is a balm during difficult times and an added joy in times of celebration. If you are lucky enough to have people in your life who have known you for many years, then you realize that there is a special kind of kinship in being known throughout your life. If your friends know you well, they can validate how you have changed and how, after all these years, you haven't. If you have permission in your friendships, they can remind you of your hidden talents and encourage you to take the chances you shy away from.

 Having a good friend is also about being one. A balanced friendship is seldom 50/50 all the time. Sometimes one person needs more than another for a while and then it switches around. However, a healthy friendship is not about one person continually being dependent on another. As you find yourself higher on the Levels of Awareness you may find that your friendships change. The people you were close to in the Victim/Struggle Level are seldom the same people you want to hang out with when you are in Deliberate Creation.

Notice today how you are a good friend. Are there ways that you could be an even better friend? That might be an interesting conversation to share with a friend you care about.
