- 2 grapefruits
- 3 tablespoons EVOO
- 2 tablespoons white wine vinegar
- 8 cups mixed greens
- 1 avocado, pitted and sliced
- 1/2 cup mint leaves
- 1/4 cup pistachios
- Peel grapefruits. Segment over large bowl, reserving 1 tbsp. juice; set segments aside. In bowl, whisk EVOO, vinegar and the reserved juice; season. Add grapefruit, greens, avocado, mint and nuts; toss.
