Summer Squash & Zucchini — Easiest Recipe Yet!

Summer squash and zucchini — and you thought we were finished with all that! Not yet, because summer hasn’t finished yet (it will be 90+ degrees in the Northeast today, just as hot in other parts of the country), and that means we can’t wrap up until Mother Nature does.

Besides, we’ve found one more great recipe — called Slow-Hand Squash from Jane Lear, Writing on Food and Travel — that is weekday-easy and as delicious as they come. In her blog, Lear says, “Lately I’ve added something new to my summer squash repertoire — cooking them low and slow. Although this method sounds counter-intuitive for a weeknight, it is extremely useful when multitasking is the name of the game.”

This recipe isn’t fast — as in 30-Minute Meal. But it is EASY — as in not much work. Slow-cooking is the secret, which lets you go about your business while this dish sits on the stove, simmering to perfection.

Lear notes that as the  days grow shorter, “summer squashes and zucchini that have been left on the vine until they’ve had a chance to develop lush flavor and texture “taste ripe — juicy, well-rounded, and full of nuance.”

So let’s say goodbye to summer with the best of the harvest, making this wonderful recipe for Slow-Hand Squash. And that’ll be it until next year.
