My Weekly Diet Update
I did do my 30 days no alcohol (actually got up to 36 days) and I did drink some wine over the Valentine Day holiday. Did drink a few glasses on 3 days. So I decided to do another 30 days no alcohol. Plus eating healthier, going to the gym, etc. So for the 2 set of 30 days I am into 4 days. My weight has been going between 210 lbs to 217 lbs. Today it is back down to 210 lbs. So one month and a half just only lost 17 lbs. So I must find a way to work harder at it!!
Zucchini Ravioli Recipe
Ingredients
- 4 medium zucchini
- 2 c. ricotta
- 1/2 c. finely grated parmesan, plus more for garnish
- 1 Egg, lightly beaten
- 1/4 c. thinly sliced basil, divided
- 1 Garlic clove, minced
- kosher salt
- Freshly ground black pepper
- 1 1/2 c. marinara sauce
- 1/2 c. shredded mozzarella
Directions
- Preheat oven to 375 degrees F. Grease a large baking dish with olive oil.
- Make the Noodles: Slice two sides of each zucchini lengthwise to create two flat sides. Using a vegetable peeler, slice each zucchini into thin flat strips, peeling until you reach the center. These are your “noodles.”
- Make the Filling: Combine ricotta, parmesan, egg, and 2 tablespoons basil in a medium bowl. Season with salt and pepper to taste.
- Assemble the Ravioli: Lay two strips of zucchini noodles so that they overlap lengthwise. Lay two more noodles on top, perpendicular to the first strips. You should end up with a “T” shape. Spoon about 1 tablespoon of filling in the center of the zucchini. Bring the ends of the strips together to fold over the center, working one side at a time. Turn the ravioli over and place in the baking dish seam-side down. Pour marinara sauce around the zucchini. Top ravioli with mozzarella. Bake until the zucchini noodles are “al dente” and the cheese is melted and starting to brown on top; 20 to 30 minutes.
- Top with more basil and parmesan and serve.

Vegan Cauliflower "Egg" Salad

Ingredients

- 3 cups small cauliflower florets
- ¼ cup vegan mayonnaise
- 1 teaspoon lemon juice
- ½ teaspoon Dijon mustard
- ½ teaspoon hot sauce, such as Frank's RedHot

- ¼ teaspoon ground turmeric
- Pinch of salt
- 2 tablespoons finely diced celery
- 1 tablespoon finely diced red onion
- 1 teaspoon finely chopped fresh dill
Directions
- 1 Bring 1 inch of water to a boil in a large saucepan fitted with a steamer basket. Add cauliflower, cover and steam until just tender, 4 to 6 minutes.
- 2 Meanwhile, whisk mayonnaise, lemon juice, mustard, hot sauce, turmeric and salt in a medium bowl.
- 3 Add the cauliflower to the bowl and coarsely mash with a potato masher or fork. Stir in celery, onion and dill.
