Tangy Avocado Salad

Ingredients
  • 2 grapefruits
  • 3 tablespoons EVOO
  • 2 tablespoons white wine vinegar
  • 8 cups mixed greens
  • 1 avocado, pitted and sliced
  • 1/2 cup mint leaves
  • 1/4 cup pistachios
Directions
  1. Peel grapefruits. Segment over large bowl, reserving 1 tbsp. juice; set segments aside. In bowl, whisk EVOO, vinegar and the reserved juice; season. Add grapefruit, greens, avocado, mint and nuts; toss.
